Well a beginning is a very important time, in life generally not just the fermentation process. I have published the first of my fermentation instructions, it is the one I would most strongly recommend and the fermented product I have the strongest connection with, Sauerkraut. It is so simple and yet its reported benefits to health are huge. The nutritional value alone is worth writing home about but when you add the benefits of fermentation its in a class of its own.
